The plaice is widely regarded as the most popular variety of flatfish. Unlike the flounder, its skin feels smooth due to its small scales. When it’s not buried under the sand and out in the open this fish also reveals its reddish spots on a brownish top. But by far its most fascinating feature are its eyes – one which can look forward while the other looks back.
